Fruit Pizza

Here is a quick and easy fruit pizza recipe.  I tell myself that it is very healthy with all of the fresh fruit.

Fruit Pizza

1 tube of sugar cookie dough

Slice the cookies and place layered on the pan.  Then smooth out to make smooth.  Bake as directed.  I place the dough on parchment paper so I can easily remove to a round glass plate.

1 8 oz. cream cheese
1/2 cup sugar
2 tsp. vanilla
Mix well.  Spread on top of cookie after cookie has cooled.

Layer fruit on top of the cream cheese mixture.

I used strawberries, pineapple, blueberries, raspberries, blackberries, and clementines.

Valentines Recipe

I thought you might want to have a Valentines Day recipe to share with your loved ones.

Raspberry Cheesecake

1 Jiffy Cake Mix
Bake as directed on the box.

8 oz. soft cream cheese
2 1/2 C. milk (added slowly)

Mix two 3 oz. vanilla instant pudding with the cream cheese mixture.

Spread over cake.

Spread 8 oz. cool whip on top.  Finally add raspberry pie filling on top of the cool whip.  You can also use cherry or blueberry pie filling.

Miracles DO Happen

For those of you who don't believe.... BELIEVE!!!  I was just given a miracle from God.  He is the most wonderful, powerful Savior.  I had been struggling with a herceptin rash that was VERY painful.  This rash was covering my body.  Some places there was more rash than skin showing.

After given 4 times the dosage that I usually get, I am doing great!  God provides.  I am so grateful for all of your prayers.  He gave  me a peace that passes all understanding.  It brings tears to my eyes when I think about how much God loves me and how honored I am for his miraculous gift.

Please take a moment and thank God for all that he has done.

Rays of Sunshine

What a gorgeous day.  The sun is shining, Jazz is laying by me as I write this blog.  I'm having an awesome week.

Many of you had checked out my Caringbridge site and realized that things keep changing in my life.  I feel very blessed that I am a believer in our Lord Jesus Christ.  He said, "The things which are impossible with men are possible with God." Luke 18:27.  I fully believe this.  It is through his grace and mercy that I continue to get through each and every day.

Glen has been around this week.  For those of you that don't know him, he is my son.  He is married to Liz and they live in Jackson, Minnesota.  Liz is working hard this week while Glen is doing some woodworking.  It has been a great time bonding and spending time with him.

Brittany and Josh made it back from Ottumwa.  We were able to see them the past two nights as well.  I really enjoy their company and hearing about their Christmas.  Before you know it, ISU will be back in the swing of things again.

Dave is still busy at work.  I asked that he take off a day so we can spend some time together before the next set of treatments start.  I'm not sure that will happen however.  It seems like the days are flying by and I start radiation next Wednesday already.

As for me, I have been working on the yearbook for school.  My eyesight is good again for the time being. I am able to put names to pictures and reflect on what teaching means to me.

What a Bumpy Ride

I'm going to have to go back and fill in the rest of the blog later.  I wanted to show some of my rash so others can see what it looks like.  I feel that we need to have some documentation so others can learn from it.
